Pork, veal, parsley, lemon: four things that make a sausage so pale that it looks undone. Weißwurst, the white sausage of Munich, is made fresh, with no smoke or colour, and it is eaten in the morning, traditionally before noon.

Do not boil it, and do not fry it. Bring water to the boil in a wide pan, take it off the heat and let it stand for 2 minutes, then lower the sausages in and leave them for 15 minutes with the lid on. The water must stay hot but never bubble, because the skin splits and the sausage loses its juice. Serve them in a bowl with a little of the hot water.

The traditional way to eat one is to slit it lengthways and peel off the skin, or to suck the meat out. A knife and fork is allowed. Spread sweet Bavarian mustard on each bite, and serve with a soft pretzel and a wheat beer. They do not keep, so cook only what you will eat.

The Method for Weisswurst

Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Bring the water to the boil in a wide pan, then take it off the heat and leave for 2 minutes.

  2. Lower in the sausages, cover and let them poach off the heat for 15 minutes; the water should stay just below a simmer, never boiling, or the skins split.

  3. Lift out with a slotted spoon and serve in a bowl with a little of the hot water.

  4. Serve with the pretzels and the mustard.
