Some Background
On a hot afternoon, in the garden, with a jug on the table: that is when this drink earns its place. It tastes of very little but cold, green and fresh, which is exactly what is wanted.
Blend the cucumber with the mint, lime juice, sugar and half the water until smooth, and strain through a fine sieve. The sieve matters because unstrained cucumber leaves a pulp that settles at the bottom. Press the pulp with a spoon to get every drop. Most of the flavour sits in the juice you can squeeze out.
Add the remaining water and taste. A spoonful more sugar rounds off the edges if the cucumber is bitter. Chill the jug for at least 30 minutes if you can, though ice will do the job if you cannot.
Serve it over plenty of ice with extra mint leaves and thin slices of cucumber in each glass. For a longer drink, top up with sparkling water.

Swaps and Variations
- Lemon is the everyday swap for limes in this kind of dish — the acidity plays the same role even though the flavour is not identical.
