A Few Pointers

  • Shake hard so the coffee foams.
  • Strain over fresh ice.
  • Use very cold milk for the foam.

Some Background

This is what to drink on a hot afternoon in Athens, in a cafe with the shutters down and the fan on. Freddo cappuccino is the Greek iced coffee: a double espresso shaken with ice and sugar until it is cold and frothy, then topped with a thick, cold milk foam.

Pull a double espresso for each glass. Put the hot coffee in a cocktail shaker, or a jar with a tight lid, with plenty of ice and a spoonful of sugar. Shake hard for 20 seconds until the outside of the shaker is frosted and the coffee has foamed. Strain it into a tall glass over fresh ice, since the first ice will have melted.

For the foam, use very cold milk, and whisk it in a jar or with a handheld frother for 30 seconds, until it holds a thick, glossy froth. Spoon it on top of the coffee, which will keep it separate in two layers. Serve with a straw. Greek cafes also make freddo espresso without the foam, with just the shaken coffee over ice.
