What's Going On Here
Shawarma is meat cooked on a vertical spit and shaved off in thin, crisp-edged slices, and the home version recreates that on a hot tray. The secret is thin strips and a very hot oven.
Slice the lamb as thin as you can and toss it with the cumin, coriander, paprika, cinnamon, garlic, lemon juice and oil. Leave it for about 15 minutes. Spread it in one layer on a tray, with space between the pieces. Do not pile the meat up. Piled lamb steams, and spread lamb crisps.
Roast at 240°C / 465°F for 12 to 15 minutes, turning once, until the edges are browned and crisp and the middle is cooked. If your oven runs hot, check at 10 minutes.
Make the sauce by stirring the tahini, yoghurt, lemon juice and garlic with a little water until pourable. Warm the flatbreads, then fill with the lamb, tomato, onion, pickles and sauce.
Storage and Reheating
Keeps in the fridge for 2 days. Reheat in a hot pan to re-crisp.
If You're Missing Something
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
