  1. Mix the flour, yeast, salt and sugar. Add the water and oil and knead for 8 minutes until smooth. Cover and leave to rise for 1 hour.

  2. Heat the oven to 240°C / 465°F with a baking tray inside. Brown the sausage in a pan for 5 minutes, breaking it up, and drain.

  3. Stretch the dough to a 30 cm round on baking paper. Spread with the passata and oregano and scatter over the mozzarella.

  4. Top with the sausage, pepperoni, pepper, onion, mushrooms and olives in a single layer.

  5. Slide onto the hot tray and bake for 15 minutes until the crust is blistered and the cheese is bubbling.

Notes From the Method

Brown the sausage first so it does not release fat on the pizza.

Pat wet vegetables dry before topping.

Keep the toppings thin so the base crisps.

If You're Missing Something

  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.

Storing and Reheating

Keeps for 3 days in the fridge. Reheat slices in a hot oven.
