Making Salmon Loaf

  1. Heat the oven to 180°C / 355°F (160°C / 320°F fan). Butter a 900 g loaf tin.

  2. Stir the breadcrumbs into the milk and leave for 5 minutes. Add the eggs, onion, celery, mustard, zest, salt and pepper.

  3. Flake in the salmon and mix gently. Press into the tin.

  4. Bake for 35 minutes until set and golden on top. Rest for 10 minutes before turning out and slicing.
